Leave them until all the leaves have fallen off and they are fully dormant, then trim them down to about 6inches of stem. They shouldn't need any more protection than being in the greenhouse, and very little watering, if any, as you want to try to avoid the possibility of mould growing on the stems, but if the temperature gets very low in an unheated house, cover them with fleece or newspaper (not plastic, which will increase the danger of moulds because it won't ventilate damp away when the temperature rises in the sun during the day.)
In Spring, when they show signs of life, ie buds beginning to form, you can re-pot, start feeding and watering, and either just bring them on and replant in containers, or take cuttings from them and increase your stock.
