What does "show" and "place" mean when talking about greyhound racing?

Those are types of wagers. A "win" wager means that you only collect money if the animal crosses the finish line first. A "place" wager means that you collect if the animal crosses the line first or second. A "show" wager means you collect if your animal crosses the line first, second, or third.
Place and Show wagers usually pay less than a Win wager. There's only one animal who can win the race, so the Win pool is paid only to those people who bet on that animal. However, two horses share the place pool and three horses share the show pool... so there's a lot more people who have to split those pools, so you collect less for those wagers although you have a better chance of winning since your animal can finish near the front but do not have to be first.
