1 pound lean ground beef
1 (10.75 ounce) can condensed chicken gumbo soup

In large skillet over medium heat, cook ground beef until brown, 5 to 10 minutes. Drain. Return meat to skillet, with soup. Simmer until heated through, 5 minutes. Serve hot.

Best Tuna Casserole

1 (12 ounce) package egg noodles
1/4 cup chopped onion
2 cups shredded Cheddar cheese
1 cup frozen green peas
2 (6 ounce) cans tuna, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
1/2 (4.5 ounce) can sliced mushrooms
1 cup crushed potato chips

Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
Preheat oven to 425 degrees F (220 degrees C).
In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

Quick and Super Easy Chicken and Dumplings

2 1/4 cups biscuit baking mix
2/3 cup milk
2 (14 ounce) cans chicken broth
2 (10 ounce) cans chunk chicken, drained

In a medium bowl, stir together the biscuit mix and milk just until it pulls together. Set aside.
Pour the cans of chicken broth into a saucepan along with the chicken; bring to a boil. Once the broth is at a steady boil, take a handful of biscuit dough and flatten it in your hand. Tear off 1 to 2 inch pieces and drop them into the boiling broth. Make sure they are fully immersed at least for a moment. Once all of the dough is in the pot, carefully stir so that the newest dough clumps get covered by the broth. Cover, and simmer over medium heat for about 10 minutes, stirring occasionally.

This is my old grocery list from when my kids were teenagers and we were spending the $200 every other week on groceries! Please note that the more heads that appeared for dinner the more potato or pasta went into the meal, they are cheap.

1 large beef roast
1 large pork roast
6 cans tomatoes, diced
6 cans tomato sauce
large sack onions
large sack potatoes
large bag each frozen
green beans
peas
broccoli
cauliflower
corn
18 cans fruits

slice and dice when you get home from the market. You need to have your menus made up and shop according to what you need to buy for each menu item.

the 2 roasts are never going to be a meal in and of themselves. They are going to divide up and be 14 to 21 separate meals. Semi freeze the meats so they slice and dice easily while you are slicing and dicing the onions.

Place each item measured into zip sandwich bag and label with both the recipe and the day it is to be used. Freeze!!

first offence eating your menu items out of hand - a threat and no dinner
second offence eating your menu items out of hand - a severe whack about the head and shoulders
third offence eating your menu items out of hand - send to the neighbors house
fourth and final offence - divorce!

My children, grown with families of their own, still ask what a thing is for before eating it out of my fridge or freezer or my pantry.

contact for suggestions for menus. I have a time figuring out how to cook for 2 people after spending most of my life cooking for minimum of a dozen!

Buy what is in season because it will be cheaper. Right now for instance, potatoes, cabbage, squash, onions, turnips, carrots, broccoli, cauliflower, apples, are on sale as is pork and beef. Plan your meals around the sale items. That's what I do.

I also keep a good selection of herbs and spices and special sauces on hand such as Rib sauce, lots of chinese and thai sauces....sloppy joe mix and tomato sauce and jarred basil pesto.
