how to make good ribs?

Postby kaylam427 on Sat Oct 24, 2009 3:27 am

I'm from Kansas, and KC BBQ is of course my fav. I think there are 3 things: 1. good rub, 2. slow cooking with good moisture, 3. good sauce.

I like this rub: http://www.recipezaar.com/16732

This cooking plan: http://www.recipezaar.com/16794

This sauce: http://www.recipezaar.com/16745

It's all from Gates BBQ in KC, which has the best extra hot BBQ sauce ever! But you have to buy that from them :-)

For the tenderest ribs, peel off the membrane on the inside curve of the ribs. I use a paper towel to grab it at one corner, then pull slowly.

MOIST AND TENDER OVEN BAKED BBQ RIBS

2-4 lbs. boneless beef or pork ribs
1/4 c. salt
1/4 c. sugar
2 Tbsp. paprika
2 (18 oz.) bottles of your favorite Barbeque Sauce
Paprika

Preheat oven to 250ºF.

Mix salt, sugar, and paprika. Roll each portion of meat in sugar-salt-paprika mixture. Place meat in large baking dish in about one inch of water. Cover with foil.

Bake at 250ºF for one hour - remove from oven - turn meat. Bake at 250ºF for another hour - remove from oven. Drain liquid, add barbeque sauce as desired - increase heat to 400ºF degrees. Bake 30 minutes, uncovered. Remove from oven and serve
