How easy is it to make you own bread fast (any type)?

Cookbooks make it look easy- water, flour, salt, add butter/ghee and milk if you like. I pour the mixture on aluminium foil on a very hot wood-burning heater. The end result doesn't even match frozen pizza base status, though it's edible. Have tried different flours. Like having multiple bank accounts I feel I've made something simple overly-complicated.

It's very easy. The only bread recipe I use is this:

INGREDIENTS (Nutrition)
2 cups warm water (110 degrees F/45 degrees C)
2/3 cup white sugar
1 1/2 tablespoons active dry yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups bread flour

DIRECTIONS
In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
Bake at 350 degrees F (175 degrees C) for 30 minutes.

My sister makes the most amazing breads... pumpkin bread, apple walnut, carrot, zucchini... she puts them in a gas oven at 375 and bakes them in recycled large tin cans. The end result is a lovely round bread roll; they're beautiful and delicious. The recipes vary and I'm sure you can google some good ones, but I've found that bread cooked with some fruit or veggie adds a moisture that water or milk alone can't. Personally, I'm a good cook, but I can't bake very well. Still, I've followed some recipes to the letter and turned up some pretty nice bread... it's not that hard... you're just over-thinking it!
