Easy Meatloaf recipes?

Ive looked around and found tons of meatloaf recipes and all of which require like 20 ingredients! I'm not a chef, and want to keep it simple as possible, as I'm new to this whole cooking thing, and preferable something without onions and green peppers.. Any Ideas?

Meatloaf
Heat 1 tbsp of oil, add 1-2 lbs thawed lean ground beef.
Mix in the ground pork of 1-2 breakfast sausage(s).
Pour off the excess grease, when meat no longer pink.
Mix 1/2 cup bread-crumbs, or regular oatmeal.
Some people like to add a raw egg & mix thoroughly.
Pack everything into a loaf pan of suitable size.
You can put a few strips of bacon on top as well.
Bake at 350-400F until firm to the touch.
Top with ketchup, steak-sauce, or BBQ sauce.

OLD-FASHIONED GLAZED MEATLOAF

1 lb. lean ground beef
1 pkg. saltine crackers, crushed fine (One ROW, not the entire box!)
1 egg
1 cup ketchup
1/4 cup milk (this will keep it very moist!)
1 tsp. Worchestershire sauce

COMBINE: All ingredients thoroughly. (YES!! You might need to use your hands!) Form into loaf and place in loaf pan sprayed lightly with cooking oil.

GLAZE: Combine 1/2 cup ketchup with 1/2 cup brown sugar. Stir until brown sugar dissolves and spread evenly over meatloaf.

BAKE: Uncovered, at 350* for 50-60 minutes.

SERVE: With Baked Potatoes and Sour Cream.

seasoned bread crumbs and an egg and choice of spices , oregano is a must; mix and place in loaf pan top with a few strips of bacon and tomato sauce

Hmm, if you want a really simple recipe, but don't want it to taste good, you're out of luck. Though, there is some recipes that don't take a ton. :)

Need:
1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
1/3 cup ketchup

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
Bake at 350 degrees F (175 degrees C) for 1 hour.

Here are some great recipes:

Meatloaf - Amish Meatloaf

Meatloaf

2 pounds ground beef
2 1/2 cups crushed Ritz cracker
1 medium onion, chopped
2 eggs
2 slices bacon
3/4 cup ketchup
1/4 cup brown sugar

Sauce

1 cup ketchup
2 tablespoons white vinegar
3/4 teaspoon salt
2 tablespoons yellow mustard
1/2 cup brown sugar

Preheat oven to 350. Mix all meatloaf ingredients, except bacon. Press into loaf pan and top with bacon. Bake for 1 hour. Mix sauce and spread over top during last 15 minutes of baking.

Meatloaf - Diner Meatloaf

1 medium onion, finely chopped
1 small green bell pepper, finely chopped
1 egg, lightly beaten
3/4 cup rolled oats
1 cup tomato sauce
2 tablespoons steak sauce or ketchup
3/4 teaspoon garlic salt
1-1/2 pounds ground beef
1/2 pound lean ground pork
2 tablespoons all purpose flour
2 cups beef stock

Preheat oven to 375°F. Combine first 7 ingredients and pepper to taste in a medium bowl. Stir with a fork to mix. Add ground beef and ground pork and blend well. Rinse an 8x4 inch loaf pan with cold water. Shake out excess water but do not dry. Pack meat mixture into rinsed pan. Invert and unmold meatloaf onto a lightly oiled baking sheet. Bake about 1 hour or until a meat thermometer inserted into center of loaf reads 160°F. Let stand 5 minutes. Drain off excess fat into a small bowl. Measure out 2 tablespoons fat and discard the remainder. Cover meatloaf with foil to keep warm. Heat reserved fat in a medium saucepan over medium heat. Sprinkle in flour and cook about 2 minutes, whisking constantly, until flour is lightly browned.

Whisk in beef stock and bring to a boil, whisking until thick and smooth. Reduce heat to medium low and simmer 5 minutes, stirring often. Season with salt and pepper to taste. Slice meatloaf and pass a sauceboat of gravy on the side. The recommended wines are: Merlot, Beaujolais, or White Zinfandel.

Meatloaf - Fire Station Meat Loaf
Serves 16

1 pound bacon, cut into 1 inch pieces
2 onions, chopped
5 pounds ground beef
5 pounds spicy ground pork sausage
3 (10 ounce) packages frozen chopped spinach , thawed, drained and squeezed dry
3 (4 ounce) cans sliced black olives, drained
3 cups pistachio nuts, chopped
1 cup ketchup
3 eggs
1 (1.25 ounce) packet meatloaf seasoning mix
1 pound pepper jack cheese, cubed
1/2 cup ketchup, or as needed

Preheat the oven to 350 degrees F (175 degrees C). Place bacon in a large deep skillet over medium-high heat. Add onions, and cook, stirring frequently, until bacon is crisp and onions are transparent. Drain off excess grease, and set aside to cool. In a large bowl, mix together the ground beef, pork sausage, bacon and onions, spinach, olives, pistachio nuts, 1 cup of ketchup, eggs, and meatloaf seasoning until well blended. Pat meat into a loaf shape, and place in a large baking pan. A roasting pan will work well. Poke cheese cubes into the top of the loaf so they are completely covered. Brush remaining ketchup generously over the top. Bake for 1 1/2 hours in the preheated oven.

Meatloaf - Lemon Barbeque Meatloaf
Serves 6

1 ½ pounds ground beef
¼ cup lemon juice
½ cup water
1 egg beaten
4 slices day-old bread, torn into small pieces
¼ cup chopped onion
2 teaspoons seasoning salt
½ cup ketchup
1/3 cup brown sugar
1 teaspoon mustard powder
¼ dash ground allspice
¼ teaspoon ground cloves
6 slices lemon

Preheat oven to 350 degrees. Grease a 9x13 inch baking dish. In a large bowl, mix together the ground beef, lemon juice, water, egg, bread, onion and seasoning salt until well blended. Shape into 6 individual loaves. Place them in the prepared baking dish.

Bake for 15 minutes in the preheated oven while you prepare the topping, stir together the ketchup, brown sugar, mustard powder, allspice and cloves. Spoon the sauce over the loaves, then top each one with a slice of lemon. Return to oven, and bake for an additional 30 minutes, or until cooked through.

EASY ITALIAN MEATLOAF

2 1/2 lbs ground beef or chuck
2 large peppers, red or green, coarsely chopped
1 16 oz can diced tomatoes
1 large sweet onion, chopped
4 slices bacon
1 1/2 cups Italian breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons minced or pressed garlic
1/2 teaspoon basil
1/3 teaspoon oregano
1/3 cup chopped fresh parsley (do not substitute)
1 teaspoon seasoned salt or beef bouillon powder
2 eggs
1/3 teaspoon ground black pepper
1/3 cup ketchup (or more as needed)
onion and garlic powder to taste

Preheat oven to 375°F.
In a large bowl, combine meat, eggs, seasonings and remaining ingredients except ketchup and bacon, adding breadcrumbs to mixture last. If meat is low in fat, add up to 1 tablespoon olive oil. Mix well.

Press meat into a loaf shaped pan, forming a dome shape. Brush top with ketchup and sprinkle with onion and garlic powder, salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking, being careful not to allow oven to get cold or additional cooking time will be required. If desired, cover with thinly sliced onions.

Bake uncovered 1 1/2 hours.

Variation: Substitute your favorite barbeque sauce for basting

This one is simple and good:

No Fuss Meatloaf

2 eggs
1/2 cup water
1 (6 ounce) package instant stuffing mix
2 pounds ground beef
Ketchup


1.In a large bowl, beat eggs and water. Add stuffing mix and contents of seasoning packet; mix well. Add beef; mix well. Press into an ungreased 9-in. x 5-in. x 3-in. loaf pan. Top with ketchup. Bake, uncovered, at 350 degrees F for 1-

Bacon Cheeseburger Meatloaf

Ingredients:

* 1 lb ground chuck
* 10 slices bacon, cooked and crumbled
* 1 (8 ounce) package sharp Cheddar, grated
* 2 large eggs, lightly beaten
* 1/4 cup bread crumbs, toasted
* 1/4 cup mayonnaise
* 1 tablespoon Worcestershire sauce
* 1/4 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/3 cup ketchup
* 2 tablespoon prepared mustard
* 1 (3 ounce) can French fried onions


Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9x5x3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake 10 to 15 minutes, or until meat is no longer pink

1 pound each, ground pork and beef
1/2 c bread crumbs
2 Tbsp ketchup
1 Tbsp mustard
2 eggs,slightly beaten
1/4 c chopped parsley (optional)
1/2 c sour cream
1 1/2 tsp salt
1/2 tsp pepper
Combine all ingredients and mix well.
Line a sheet of waxed paper with 6-8 slices of bacon, slightly overlapping. Place meat mixture on top and spread to cover. Top with grated Old cheddar cheese leaving a 1 inch border around edges. Roll up starting with side that has bacon ends, being sure to pull waxed paper out as you roll. Place on baking sheet with high sides or in centre of 9x13 baking dish. Pinch ends to seal in cheese well or it will all ooze out during cooking.

Pizza meatloaf:

2 pounds ground chuck
1/2 teaspoon garlic powder or salt or 2 chopped cloves garlic
1 envelope Liptons onion soup - instead just some othe soup mix
1 teaspoon oregano
1 teaspoon basil
1 cup Parmesan cheese (you can use the kind that is dried in the shaker can)
a few fennel seeds if you have them
Salt & Pepper
2 eggs
3/4 cup bread crumbs or cracker crumbs soaked in 2 eggs and half a cup of milk or water or stock.
1/2 cup tomatoe sauce or ready made spaghetti sauce.

Mix with hands put in a loaf pan or form a loaf on a baking sheet. Use foil to catch the drippings.

Cook on low heat about 300 degrees for about an hour and 15 minutes or cook at 325 for about an hour.

At the end of the cooking about 10 minutes before removing the meatloaf from the oven cover it in 1/2 cup tomato sauce or spaghetti sauce.

This is so good cold too and makes fantastic sandwiches

Basic recipe

For every 1lb of lean ground meat use:

1 egg
1/3 cup liquid (milk, broth, V-8 juice etc)
1/3 cup starchy filler (cooked rice, bread crumbs, cracker crumbs etc)
1/3 cup chopped vegetables (drained salsa, chopped celery, onions etc)
3/4 tsp salt
1/4 tsp pepper


So a mexican meatloaf could be
2lb ground beef
2 eggs
2/3 cup spicy V-8
2/3 cup drained salsa (can drain liquid into cup before adding V-8 and top off with V-8)
2/3 cup tortilla chip crumbs

Soak crumbs in V-8 add beaten egg and salsa. gently mix in meat. Top with pepper jack cheese the last 5 min of baking.
